Ragu

















Ingredients:

4 tbs butter
1 onion
1 celery stalk
1 carrot
3 oz pancetta or bacon
7 oz ground beef
7 oz ground pork
2 oregano sprigs
pinch of nutmeg
4 oz chicken livers
1/2 cup dry white wine
3/4 cup milk
14 oz can diced tomatoes
1 cup beef stock

Serve with:

1 lb tagliatelle
grated parmesan
